At J-Spec, a East Village Japanese restaurant that opened in November, wagyu beef is both the opening act and the featured headliner. But at Marezzata in Midtown, a new restaurant from the same owners, wagyu is the backup vocalist to a wide range of Italian and Japanese mashup dishes taking center stage. For now, dishes like mentaiko spaghetti, eggplant dengaku fritters, and American Wagyu Pound Steak are only available for takeout and delivery.
