Hearing the phrase “green pizza” might conjure up images of dough topped with spinach or the contents of your morning smoothie. Luckily, the best pizza at Strapoli, a small all-day cafe and pizzeria on the border of Lakeview and Lincoln Park, doesn’t include any of those ingredients. Their fantastically rich Neapolitan-style pistachina comes with pistachio pesto, mushrooms, and so many crushed pistachios their value probably equals a small country’s GDP. There are three other options on the short menu (including a textbook margherita pie), or you can DIY your whole meal by BYOB-ing ($2 per person) and building your own pizza. Everything is fired to order, which results in a thin, puffy crust that’s the perfect combo of charred and chewy. On the off-chance you don’t manage to finish every last slice, the crust seemingly gets softer and more flavorful over time, soaking up oil from the toppings. If ever there was a time to eat cold pizza the next morning, this is the pizza to do it with.
