In Austin, birria tacos are most definitely having a moment, and there’s been a whole new phenomenon showing up at a few spots around town: birria ramen. It’s a dish that combines birria (mainly beef), consomé - the broth made from the meat, roasted chiles, onions, cilantro, and other spices - and ramen noodles. The ramen often comes courtesy of a Tapatío Ramen noodle soup cup, and usually fresh cilantro and onions are added in for good measure. The origins of the dish are maybe a little unclear, but one thing that is clear is that birria ramen is delicious on its own, and even better when you dunk a birria taco into it. Here are four spots where you can get birria ramen right now.

We’re fans of the quesabirria tacos at Jamie’s Barbecue And Mini Tacos in South Austin, and they’ve recently added birria ramen to their menu. As is the burgeoning trend these days, they use a Tapatio Ramen noodle soup cup and add in their bright and rich consomé and birria beef, resulting in a soup that is greater than the sum of its parts, especially when you hit it with some lime. At Jamie’s you can choose between regular and spicy versions, and we’d highly recommend the spicy.

Out in Buda, you will find the new trailer Tejas Birria. As the name implies, they’re serving the requisite birria and quesabirria tacos, but they’re also doing things you don’t see at too many other places, including a birria ramen. This is possibly one of the only places in the known universe where you can dunk a birria grilled cheese sandwich into a cup of birria ramen, and we are proud to say that we have accomplished this challenging task.


If you’ve ever found yourself on Instagram, mesmerized by footage of rich, birria-filled tacos being dunked into a steaming bowl of consomé, there’s a good chance you stumbled across a video taken at Palo Seco (formerly known as La Tunita 512). That, or you’re in a very vivid daydream that we’d love to be a part of. The birria ramen is a newer addition to Palo Seco's menu, and it’s delightful, with their bright and rich chili and lime-infused consome.

In the parking lot of Hay Elotes on East 7th - one of our favorite spots on the East Side for ice cream, sorbet, fruit cups, and, of course, elotes - there’s a newly-opened trailer serving birria. The whole menu here centers around birria de res, with tender, stewed beef filling everything from tacos and tortas, to mulitas and quesadillas. And, of course, ramen. Much like the other spots we’ve seen around town, a cup of Tapatío Ramen plays host to a few ladles of hot consome. Here, however, they’ve transferred it to a larger cup, allowing more space for additional toppings, like avocado and radishes.
