Maybe you don’t get why people love birria tacos. We understand. Bad birria can be heavy, greasy, and drowning in cheese. But the ones at this taco truck on Bird Road will change a birria skeptic’s mind. The consomme here is fresh, not sitting out in a bain-marie until it gets so concentrated it tastes like salty red water. The broth is more vinegary and velvety. And the birria con queso tacos you’re dunking in it are laced with the perfect amount of cheese. There are other tacos at Taco Baja Republic. The asada is a solid choice if you’re decidedly anti-birria. But give the birria here a chance—it’s the best thing on the menu.
