Maple Block is a well-known commodity in the LA barbecue world. Their original location has been doing Texas-style barbecue in Culver City since 2015, and now you can find their wood-smoked spare ribs, sausage links, and chicken wings at a second location in DTLA’s Grand Central Market. Maple Block’s walk-up window stretches along the entire tree-lined patio on Hill Street and all of the ordering happens at the bar counter. Whether you swing by the beer garden for a quick lunch or do dinner before a Dodgers game, you’ll have to work your way through some crowds. But once you do, you’ll find a beautiful piece of brisket. With candy-like bark, soft layers of fat, and a prominent smoke ring, every slice will make you want to be a better person. Just keep in mind that they’re only open Friday to Sunday, until the meat sells out.
